I was employed as a professor in the Food Science Department, Faculty of Agriculture, University of Tripoli, Libya and currently live in Beaverton, Oregon. My academic training and over 39 years of experience working as a lecturer and researcher in food and microbiology, I have published several books and scientific publications locally and internationally, one of my books is about “Fundamentals of Lab Microbiology”. My Master dissertation was on “Microbial and Chemical Studies on Sun Dried Lamb Meat, and I have published several scientific papers about food microbiology. My doctoral dissertation was conducted in consultation with Prof. Melton Bailey, Food Science and Nutrition Department, Faculty of Agriculture, University of Missouri. The subject of my thesis was “Effect of Calcium, Adenosine Triphosphate and Nitrite on the Degradation of Myofibrillar Protein.
